  • 1 pound chicken tenderloins
  • 1 cup lemon juice Freshly squeezed is best!
  • 1 cup Pecorino cheese Grated
  • 2 tablespoons olive oil
  • 3 cloves garlic Minced
  • Salt and pepper To taste
  • Fresh parsley For garnish (optional)

Preparation
  1. In a mixing bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.
  2. Place the chicken tenderloins in a large zip-lock bag or dish and pour the marinade over them. Allow them to marinate in the fridge for at least 30 minutes.
Cooking
  1. Preheat your oven to 400°F (205°C). Place the marinated chicken tenderloins on a lined baking sheet.
  2. Sprinkle the grated Pecorino cheese generously over each piece of chicken.
  3. Bake for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). The cheese should be bubbly and slightly golden.
  4. Remove the chicken from the oven and let it rest briefly, then serve garnished with fresh parsley.
