- In a mixing bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.
- Place the chicken tenderloins in a large zip-lock bag or dish and pour the marinade over them. Allow them to marinate in the fridge for at least 30 minutes.
Cooking
- Preheat your oven to 400°F (205°C). Place the marinated chicken tenderloins on a lined baking sheet.
- Sprinkle the grated Pecorino cheese generously over each piece of chicken.
- Bake for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). The cheese should be bubbly and slightly golden.
- Remove the chicken from the oven and let it rest briefly, then serve garnished with fresh parsley.
