Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pecorino cheese, finely grated Can substitute with Parmesan cheese.
  • 1 cup breadcrumbs (panko works great here!) Feel free to use gluten-free versions if needed.
  • 2 pieces lemons (zest and juice) One lemon for the sauce.
  • 2 pieces eggs Used for the egg mixture.

  • to taste tablespoons Olive oil For frying the chicken.
For the Creamy Lemon Sauce
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon Dijon mustard
  • 1 pieces lemon (juice)
  • to taste tablespoons Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, combine the pecorino cheese, breadcrumbs, lemon zest, and a pinch of salt and pepper.
  3. In another bowl, whisk the eggs along with the lemon juice.
Cooking
  1. Dip each chicken breast into the egg mixture, allowing any excess to drip off.
  2. Dredge the chicken in the pecorino-breading mix, ensuring all sides are coated.
  3. Heat a skillet over medium heat and add a splash of olive oil. Cook the chicken breasts for about 4-5 minutes per side until the crust is golden brown, then transfer to a baking dish.
  4. Bake in the preheated oven for 15 minutes or until the internal temperature reaches 165°F (75°C).
Sauce Preparation
  1. In a saucepan over medium heat, melt the butter, then mix in the heavy cream, Dijon mustard, and lemon juice. Stir until combined and heated through.
Serving
  1. Once the chicken is done, plate it up and drizzle the creamy lemon sauce over the top. Garnish with fresh parsley.
