Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until they resemble wet sand.
- Press this mixture firmly into the bottom of a 9-inch springform pan.
- Bake for about 8-10 minutes until lightly golden, then allow it to cool completely.
Make the Mousse
- In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth.
- Gradually add the powdered sugar, lime juice, and zest, mixing until combined.
- In a separate bowl, whip the heavy cream until stiff peaks form and gently fold it into the lime mixture.
Assembly
- Once the crust has cooled, pour the lime mousse over it, smoothing the top with a spatula.
- Cover and refrigerate for at least 4 hours, or preferably overnight.
Create the Glaze
- In a small bowl, whisk together the powdered sugar, lime juice, and zest until smooth.
- Set aside to thicken.
Finish It Up
- Once the cheesecake has set, drizzle the lime glaze over the top.
