Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
For the lime mousse
  • 8 oz cream cheese, softened Ensure at room temperature
  • 1 cup powdered sugar
  • 1/2 cup fresh lime juice (about 4 limes)
  • Zest of 2 limes
  • 1 cup heavy whipping cream Whip until stiff peaks form
For the lime glaze
  • 1/2 cup powdered sugar
  • 2 tablespoons fresh lime juice
  • Zest of 1 lime

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until they resemble wet sand.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake for about 8-10 minutes until lightly golden, then allow it to cool completely.
Make the Mousse
  1. In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth.
  2. Gradually add the powdered sugar, lime juice, and zest, mixing until combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form and gently fold it into the lime mixture.
Assembly
  1. Once the crust has cooled, pour the lime mousse over it, smoothing the top with a spatula.
  2. Cover and refrigerate for at least 4 hours, or preferably overnight.
Create the Glaze
  1. In a small bowl, whisk together the powdered sugar, lime juice, and zest until smooth.
  2. Set aside to thicken.
Finish It Up
  1. Once the cheesecake has set, drizzle the lime glaze over the top.
  2. Slice, serve, and enjoy!

Notes

Keep the cheesecake in the fridge until ready to serve for the best firmness.
