Preparation
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, toss the broccoli florets with olive oil, lemon juice, salt, and pepper.
Cooking
- Spread the broccoli in a single layer on a baking sheet and roast for about 15-20 minutes until caramelized.
- While the broccoli is roasting, chop the walnuts and crumble the feta cheese.
Combining
- Once the broccoli is out of the oven and slightly cooled, combine it with the feta and walnuts in a bowl.
- Toss everything together and adjust salt and pepper as needed.
Notes
This salad can be made ahead of time. For extra flavor, add lemon zest on top before serving. You can also use pecans or almonds in place of walnuts.
