Ingredients
  

Noodles
  • 8 oz lo mein noodles (or spaghetti) Use spaghetti if lo mein noodles are unavailable.
Sauce
  • 2 tablespoons soy sauce Tamari can be used for a gluten-free option.
  • 1 tablespoon oyster sauce A vegan substitute can be used.
  • 1 tablespoon sesame oil
Vegetables
  • 1 cup bean sprouts
  • 1 medium bell pepper, sliced
  • 1 medium carrot, julienned
  • 1 cup broccoli florets
  • 2 medium green onions, chopped
  • 2 cloves garlic, minced

Method
 

Cooking the Noodles
  1. Start by boiling a pot of water. Once it’s bubbling, add the lo mein noodles and cook according to package directions until al dente. Drain and rinse under cold water.
Preparing the Sauce
  1. In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil.
Sautéing the Vegetables
  1. In a large skillet or wok over medium heat, add a splash of oil. Toss in the minced garlic, followed by the bell pepper and carrot. Sauté for about 3-4 minutes.
  2. Add the broccoli and bean sprouts and cook for another 2-3 minutes.
Combining Noodles and Sauce
  1. Add the cooked noodles to the skillet, pouring over the sauce. Toss everything together, adding a splash of water if needed.
Finishing Touch
  1. Sprinkle the chopped green onions over the top and give it one last toss.

Notes

If noodles are sticking, a sprinkle of sesame oil can help. Feel free to add or substitute veggies based on what you have. For a saucier dish, increase soy sauce and oyster sauce amounts.
