  • 2 pieces boneless, skinless chicken breasts Gently pound to an even thickness
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs Panko works great for extra crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper To taste
  • 2 pieces eggs Beaten
  • Olive oil spray or cooking oil For frying

Preparation
  1. Start by gently pounding the chicken breasts to an even thickness.
  2. In one bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  3. In another bowl, beat the eggs until smooth.
Cooking
  1. Dip each chicken breast first into the beaten eggs, allowing any excess to drip off.
  2. Then, dip into the breadcrumb mixture and press to ensure the breadcrumbs stick.
  3. In a large skillet over medium heat, add a drizzle of oil and let it heat up.
  4. Cook the coated chicken in the skillet for about 5 to 7 minutes on each side or until golden brown and cooked through.
  5. Transfer the chicken to a plate and sprinkle with extra Parmesan before serving.

Notes

For extra crunch, consider adding crushed cornflakes to the breadcrumb mixture. Let the chicken rest for a few minutes after cooking for juicier results. Leftovers can be shredded and used in salads or pasta.
