Preparation
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang, and lightly spray with nonstick spray.
- In a medium saucepan over low heat, combine the chocolate chips, sweetened condensed milk, and butter. Stir continuously until fully melted and smooth.
- Remove from heat and stir in the vanilla extract and a pinch of sea salt. Taste for balance.
- Let mixture cool for a minute, then fold in the chopped cherries, chocolate chunks, and nuts if using.
Chilling
- Spread the fudge evenly into the prepared pan and chill in the fridge for at least 2 hours or freeze for 30–40 minutes.
Serving
- Lift the set fudge from the pan using the parchment overhang and slice into squares.
- Store in an airtight container in the fridge for up to two weeks or freeze for longer storage.
Notes
For prettier edges, press a few extra whole cherries and chocolate chunks on top before chilling. You can use coconut condensed milk and vegan chocolate chips for a vegan twist.
