Fudge Ingredients
  • 3 cups semisweet chocolate chips (or chopped chocolate) Use high-quality chocolate for the best flavor.
  • 1 can sweetened condensed milk (14 oz) Easy route to reliably smooth, rich fudge.
  • 2 tablespoons unsalted butter Adds creaminess to the fudge.
  • 1 teaspoon vanilla extract
  • 1 cup chopped cherries (drained maraschino cherries or chopped frozen/dried cherries) If using maraschino, drain them well.
  • 1/2 cup dark chocolate chunks (or roughly chopped bittersweet chocolate)
  • 1/2 cup chopped walnuts or pecans (optional) Add for crunch or leave them out for a nut-free treat.
  • 1 pinch sea salt Enhances flavor.

Method
 

Preparation
  1. Line an 8×8-inch baking pan with parchment paper, leaving an overhang, and lightly spray with nonstick spray.
  2. In a medium saucepan over low heat, combine the chocolate chips, sweetened condensed milk, and butter. Stir continuously until fully melted and smooth.
  3. Remove from heat and stir in the vanilla extract and a pinch of sea salt. Taste for balance.
  4. Let mixture cool for a minute, then fold in the chopped cherries, chocolate chunks, and nuts if using.
Chilling
  1. Spread the fudge evenly into the prepared pan and chill in the fridge for at least 2 hours or freeze for 30–40 minutes.
Serving
  1. Lift the set fudge from the pan using the parchment overhang and slice into squares.
  2. Store in an airtight container in the fridge for up to two weeks or freeze for longer storage.

Notes

For prettier edges, press a few extra whole cherries and chocolate chunks on top before chilling. You can use coconut condensed milk and vegan chocolate chips for a vegan twist.
