Mac and Cheese Meatloaf Casserole

Ingredients
  

Meat Mixture
  • 1 lb ground beef or any ground meat of your choice
  • 1 lb ground turkey or any ground meat of your choice
  • 1 large egg
  • 1 cup breadcrumbs
  • 1 teaspoon Worcestershire sauce
  • to taste Salt
  • to taste Pepper
Pasta and Cheese
  • 2 cups macaroni pasta any short pasta will work
  • 3 cups shredded cheddar cheese plus additional for topping
  • 1 cup milk
Aromatics
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
For Garnish
  • to taste Fresh parsley optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, boil salted water and cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, sauté the chopped onion and minced garlic until soft and fragrant, about 5 minutes.
  4. In a large bowl, combine the ground beef, ground turkey, egg, cooked onion and garlic, breadcrumbs, Worcestershire sauce, salt, and pepper. Mix well but don’t overdo it.
Assembly and Baking
  1. In a greased 9x13 inch baking dish, spread half of the meat mixture evenly across the bottom.
  2. Layer the macaroni over the meat, followed by 1 ½ cups of shredded cheddar cheese. Top with the remaining meat mixture and sprinkle with the rest of the cheese.
  3. Carefully pour the milk all over the casserole.
  4. Bake in the oven for about 30-35 minutes, until the meatloaf is cooked through and the cheese is bubbling and golden.
  5. Once done, allow the casserole to sit for about 5-10 minutes before serving.

Notes

Don’t skimp on the cheese and feel free to mix and match types for added flavor. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days.
