  • 1/2 cup mandarin orange juice freshly squeezed is great, canned works too!
  • 1 tablespoon fresh ginger grated or minced
  • 1/4 cup olive oil
  • 1 tablespoon honey or maple syrup for a vegan option
  • 1 tablespoon rice vinegar or apple cider vinegar
  • to taste Salt and pepper
  • 1 tablespoon Mandarin orange zest optional, for an extra zesty kick

Method
 

Preparation
  1. In a small mixing bowl or a mason jar, combine the mandarin orange juice, ginger, honey, and rice vinegar. Give it a good swirl.
  2. If you're using a bowl, whisk the mixture and slowly drizzle in the olive oil while continuously whisking to achieve a velvety texture.
  3. Add salt and pepper to taste and adjust the flavors as needed.
  4. If desired, add mandarin zest for an extra punch of citrus. Shake or stir one last time, and your dressing is ready!

Notes

This dressing can be made ahead of time and stored in the fridge for up to a week. Shake before using, as the ingredients may separate. You can experiment by swapping ginger with garlic for different flavors.
