  • 2 tablespoons olive oil For roasting.
  • 1 teaspoon salt To season.
  • 1/2 teaspoon pepper For flavor.
  • 1/4 teaspoon cinnamon To enhance sweetness.
  • 1/4 cup maple syrup The sweet magic.
  • 1 tablespoon balsamic vinegar To add complexity.
  • to taste chopped pecans or walnuts For topping (optional).

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash.
  3. In a large mixing bowl, toss the squash cubes with olive oil, salt, pepper, and cinnamon.
Cooking
  1. Spread the squash on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and caramelized, stirring halfway through.
  2. Once tender, remove squash from the oven and drizzle with maple syrup and balsamic vinegar, tossing gently.
  3. Top with chopped pecans or walnuts if desired, and serve.

Notes

Substitute butternut squash with sweet potatoes or carrots if preferred, and add feta or goat cheese for extra flavor.
