- Preheat your oven to 400°F (200°C).
- Peel and cube the butternut squash.
- In a large mixing bowl, toss the squash cubes with olive oil, salt, pepper, and cinnamon.
Cooking
- Spread the squash on a baking sheet in a single layer and roast for about 25-30 minutes or until tender and caramelized, stirring halfway through.
- Once tender, remove squash from the oven and drizzle with maple syrup and balsamic vinegar, tossing gently.
- Top with chopped pecans or walnuts if desired, and serve.
Notes
Substitute butternut squash with sweet potatoes or carrots if preferred, and add feta or goat cheese for extra flavor.
