For the Meatballs
  • 1 pound ground chicken Lean protein
  • 1/3 cup breadcrumbs For binding
  • 1 large egg Acts as a binder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme Adds flavor
  • 1/4 cup chopped green onion Fresh flavor
For the Sauce
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup For sweetness
  • 1 tablespoon apple cider vinegar Adds acidity
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder For flavor
  • optional chopped parsley for garnish

Method
 

Preparation
  1. In a bowl, combine the ground chicken, breadcrumbs, egg, salt, pepper, thyme, and green onion. Mix gently with your hands until just combined.
  2. Using your hands, shape the mixture into small balls about the size of a golf ball.
Cooking
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange the meatballs on the sheet, making sure they have some space to breathe. Bake for about 20 minutes, or until they’re golden brown and cooked through.
  3. While the meatballs are baking, whisk together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, and garlic powder in a saucepan over medium heat. Let it simmer for about 5-7 minutes until it thickens slightly.
  4. Once the meatballs are ready, drizzle the maple Dijon sauce over the top. Give them a gentle toss to coat evenly.
  5. Sprinkle some chopped parsley on top for a pop of color and an extra flavor boost.

Notes

You can prepare the meatballs in advance and store them in the fridge. They freeze beautifully! Experiment with the sauce by adding hot sauce or fresh herbs for extra flair.
