Ingredients
  

For the bites
  • 1 lb Italian sausage links not the breakfast kind
  • 6-8 slices bacon cut in half for easier wrapping
For the glaze
  • ½ cup maple syrup the real deal, not pancake syrup
  • 1 tablespoon Dijon mustard adds a nice zing
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Remove the casings from the sausage links and roll the sausage into small balls, about the size of a golf ball.
  3. Wrap each sausage ball with a half slice of bacon, securing it with a toothpick.
  4. Line a baking sheet with parchment paper and place your bacon-wrapped sausage bites on the sheet.
  5. In a small bowl, whisk together the maple syrup, Dijon mustard, salt, and pepper until well combined. Brush half of this mixture over the sausage bites.
Cooking
  1. Bake in the oven for 20 minutes. At the halfway mark, brush on the remaining maple glaze.
  2. After 25-30 minutes, check for crispiness. Broil for an extra 2-3 minutes for maximum crispiness, if desired.
Serving
  1. Remove from the oven, let cool for a few minutes, and serve with toothpicks.

Make extra for gatherings as these disappear quickly. You can prep in advance and bake when guests arrive.
