  • 4 medium sweet potatoes, peeled and cubed
  • 4 slices bacon, chopped
  • 1 cup walnuts, roughly chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • for garnish Fresh thyme (optional)

Method
 

Preparation and Roasting
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until they are nicely coated.
  3. In a large skillet over medium heat, cook the chopped bacon until crispy, then remove and let drain on paper towels.
  4. In the same skillet, add the sweet potatoes and cook for about 5 minutes, stirring occasionally.
  5. Transfer the sweet potatoes to a baking sheet and roast for 25-30 minutes or until tender and a little caramelized, stirring halfway.
  6. In the last 10 minutes of roasting, drizzle maple syrup over the sweet potatoes and mix thoroughly.
  7. Once done, remove from the oven and sprinkle crispy bacon, walnuts, and feta cheese on top.
  8. If desired, garnish with fresh thyme before serving.

Notes

If you prefer, you can substitute feta with goat cheese or cheddar. Also try butternut squash or carrots for a twist. To toast walnuts, bake them for 5-7 minutes before adding to the dish.
