Preparation and Roasting
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until they are nicely coated.
- In a large skillet over medium heat, cook the chopped bacon until crispy, then remove and let drain on paper towels.
- In the same skillet, add the sweet potatoes and cook for about 5 minutes, stirring occasionally.
- Transfer the sweet potatoes to a baking sheet and roast for 25-30 minutes or until tender and a little caramelized, stirring halfway.
- In the last 10 minutes of roasting, drizzle maple syrup over the sweet potatoes and mix thoroughly.
- Once done, remove from the oven and sprinkle crispy bacon, walnuts, and feta cheese on top.
- If desired, garnish with fresh thyme before serving.
Notes
If you prefer, you can substitute feta with goat cheese or cheddar. Also try butternut squash or carrots for a twist. To toast walnuts, bake them for 5-7 minutes before adding to the dish.
