Ingredients
  

Sweet Potato Mixture
  • 3 medium sweet potatoes, peeled and cubed
  • 1 cup pecans, roughly chopped
  • 1/4 cup pure maple syrup the real stuff, please!
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 pinch salt
  • 1 dash pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, toss cubed sweet potatoes with a pinch of salt and pepper, then boil for about 10 minutes, or until fork-tender.
Mixing
  1. In a large bowl, combine the tender sweet potatoes with maple syrup, melted butter, cinnamon, nutmeg, and chopped pecans. Toss gently to coat.
Baking
  1. Transfer the mixture to a baking dish and bake for about 25-30 minutes or until golden brown and caramelized.
Serving
  1. Remove from the oven, let cool for a few minutes, and serve warm.

Notes

Make ahead by prepping the sweet potatoes early in the day and refrigerating until ready to bake. You can also add orange juice or zest for added flavor.
