Preparation
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes into bite-sized pieces.
Cooking
- In a large mixing bowl, combine the cubed sweet potatoes, chopped walnuts, olive oil, maple syrup, thyme, salt, and pepper. Mix until everything is evenly coated.
- Spread the mixture in a single layer on a large baking sheet lined with parchment paper.
- Roast in the oven for 25-30 minutes, or until the sweet potatoes are fork-tender and caramelized. Toss halfway through for even roasting.
Serving
- Once perfectly roasted, remove from the oven and let cool for a minute before serving hot.
Notes
For a spicy kick, you can sprinkle in cayenne pepper. This dish can also be made ahead and stored in an airtight container in the fridge for up to five days.
