  • 4 pieces medium sweet potatoes, peeled and cubed Cube into bite-sized pieces for even cooking.
  • 1/2 cup chopped walnuts
  • 1/4 cup pure maple syrup Can be substituted with honey or agave syrup.
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme Fresh thyme preferred for best flavor.
  • 1 teaspoon salt Adjust according to taste.
  • 1 teaspoon pepper Adjust according to taste.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
Cooking
  1. In a large mixing bowl, combine the cubed sweet potatoes, chopped walnuts, olive oil, maple syrup, thyme, salt, and pepper. Mix until everything is evenly coated.
  2. Spread the mixture in a single layer on a large baking sheet lined with parchment paper.
  3. Roast in the oven for 25-30 minutes, or until the sweet potatoes are fork-tender and caramelized. Toss halfway through for even roasting.
Serving
  1. Once perfectly roasted, remove from the oven and let cool for a minute before serving hot.

Notes

For a spicy kick, you can sprinkle in cayenne pepper. This dish can also be made ahead and stored in an airtight container in the fridge for up to five days.
