- In a large mixing bowl, toss the sweet potato cubes with olive oil, maple syrup, salt, and black pepper.
- Gently fold in the chopped walnuts.
Cooking
- Spread the sweet potato mixture evenly on a baking sheet and roast for about 25-30 minutes, stirring halfway through.
- In the last five minutes, sprinkle on the fresh thyme.
Serving
- Let them cool a bit before serving.
Notes
Maple syrup can be substituted with honey or agave nectar. Sweet potatoes can be chopped in advance for convenience.
