  • 3 medium sweet potatoes, peeled and cut into cubes
  • 1/4 cup maple syrup Feel free to use the real stuff for better flavor.
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup walnuts, roughly chopped Adds texture and flavor.
  • 1 tablespoon fresh thyme leaves Or 1 teaspoon dried thyme.

Preparation
  1. Preheat your oven to 425°F.
  2. In a large mixing bowl, toss the sweet potato cubes with olive oil, maple syrup, salt, and black pepper.
  3. Gently fold in the chopped walnuts.
Cooking
  1. Spread the sweet potato mixture evenly on a baking sheet and roast for about 25-30 minutes, stirring halfway through.
  2. In the last five minutes, sprinkle on the fresh thyme.
Serving
  1. Let them cool a bit before serving.

Notes

Maple syrup can be substituted with honey or agave nectar. Sweet potatoes can be chopped in advance for convenience.
