Preparation
- Preheat your oven to 400°F (200°C).
- Peel and cube sweet potatoes into 1-inch pieces.
- In a large bowl, toss sweet potatoes with maple syrup, olive oil, thyme, salt, and pepper until well-coated.
- Gently fold in the chopped walnuts.
Cooking
- Spread the sweet potato mixture evenly on a baking sheet lined with parchment paper. Roast for about 25-30 minutes or until golden brown and tender, tossing halfway through.
- Once done, drizzle additional maple syrup over the top and sprinkle with extra thyme for garnish.
- Serve on a pretty dish and enjoy!
