  • 4 medium sweet potatoes, peeled and cubed Cube into 1-inch pieces
  • 1/4 cup pure maple syrup Use high-quality maple syrup
  • 1/4 cup olive oil
  • 1 cup walnuts, roughly chopped Can be substituted with pecans or slivered almonds
  • 2 tablespoons fresh thyme leaves Or use 1 tablespoon of dried thyme
  • Salt and pepper To taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube sweet potatoes into 1-inch pieces.
  3. In a large bowl, toss sweet potatoes with maple syrup, olive oil, thyme, salt, and pepper until well-coated.
  4. Gently fold in the chopped walnuts.
Cooking
  1. Spread the sweet potato mixture evenly on a baking sheet lined with parchment paper. Roast for about 25-30 minutes or until golden brown and tender, tossing halfway through.
  2. Once done, drizzle additional maple syrup over the top and sprinkle with extra thyme for garnish.
  3. Serve on a pretty dish and enjoy!

You can experiment with different types of sweet potatoes for varied flavors. Store leftovers in the fridge for up to 3 days.
