Preparation
  1. Preheat your oven to 425°F (220°C) for crispy texture.
  2. In a small bowl, whisk together olive oil, maple syrup, Sriracha, soy sauce, and a pinch of salt and pepper. Adjust Sriracha according to your heat preference.
  3. In a large mixing bowl, combine the cauliflower florets with the sauce and toss until fully coated.
Cooking
  1. Spread the cauliflower on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes, stirring halfway through.
  2. Once done, remove from the oven and sprinkle with sesame seeds and chopped green onions.
Serving
  1. Serve while hot, either as a standalone dish or paired with your favorite protein.

Notes

This dish holds up well for meal prepping. You can substitute cauliflower with broccoli or Brussels sprouts, adjusting cooking time as needed. Leftovers can be stored in an airtight container for up to 3 days.
