Preparation
- Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy.
- Add in the eggs and vanilla, mixing until fully combined.
- In a separate bowl, mix together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
- Fold in the chocolate chips and chopped maraschino cherries.
- Spread the cookie dough evenly in the prepared pan and bake for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow the cookie bars to cool in the pan for about 10 minutes before lifting them out using the parchment paper. Once fully cooled, cut them into squares.
Notes
For added flavor, consider adding a splash of almond extract. Store cookie bars in an airtight container; they last up to a week.
