Ingredients
  

For the marinade
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1-2 cloves garlic, minced
  • Salt and pepper to taste
For the main dish
  • 8 ounces mozzarella balls (bocconcini)
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon fresh basil, chopped Add more if desired
  • 1 tablespoon fresh parsley, chopped

Method
 

Preparation
  1. Combine the olive oil, red wine vinegar, minced garlic, salt, and pepper in a bowl. Whisk together until well blended, about 30 seconds.
  2. Add the chopped sun-dried tomatoes, fresh basil, and parsley to the bowl. Stir again until all ingredients are well mixed.
  3. Gently add the mozzarella balls to the marinade, tossing them gently to coat.
  4. Cover the bowl with plastic wrap and let the mozzarella marinate in the fridge for at least 15 minutes.
  5. Serve the marinated mozzarella balls with toothpicks or on a colorful platter.

Notes

If fresh herbs aren't available, dried herbs can be substituted (use less). Leftovers can be stored in an airtight container in the fridge for up to three days.
