Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, matcha powder, and salt.
Mixing
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
- Fold in the lemon juice and zest.
Baking
- Pour the batter into a greased 9-inch round cake pan and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
Cooling
- Once baked, let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
If the cake won't release from the pan, run a knife around the edges. For a chocolate version, substitute matcha with cocoa powder. A drizzle of lemon glaze can elevate the flavor.
