  • 1 ¾ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp matcha powder
  • 1 pinch salt
Wet Ingredients
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • Juice and zest of 1 lemon adds brightness to the flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, matcha powder, and salt.
Mixing
  1. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  2. Beat in the eggs one at a time, followed by the vanilla extract.
  3. Gradually add the dry ingredients to the wet mixture, alternating with milk, mixing until just combined.
  4. Fold in the lemon juice and zest.
Baking
  1. Pour the batter into a greased 9-inch round cake pan and spread it out evenly.
  2. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
Cooling
  1. Once baked, let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

If the cake won't release from the pan, run a knife around the edges. For a chocolate version, substitute matcha with cocoa powder. A drizzle of lemon glaze can elevate the flavor.
