Ingredients
  

For the Feta
  • 8 oz feta cheese (block style) Opt for a block for the best melting effect.
  • 1 cup cherry tomatoes, halved
  • 1/4 cup extra virgin olive oil More can be drizzled on top before baking.
  • 2 cloves garlic, minced
  • 1 tsp dried oregano Fresh is fine but dried works well too.
  • 1/2 tsp red pepper flakes Optional, for a little kick.
  • Salt and pepper, to taste
For Serving
  • Pita bread, for serving Store-bought or homemade.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the feta in the center of a baking dish.
  3. Scatter the halved cherry tomatoes around the feta, then add minced garlic, oregano, red pepper flakes, salt, and pepper.
  4. Drizzle olive oil generously over everything.
Baking
  1. Bake for about 20-25 minutes until the feta softens and starts to ooze.
  2. For the last 5 minutes, cut pita bread into wedges and toast them in the oven.
Serving
  1. Serve the baked feta hot with crispy pita wedges.

Notes

Feel free to add other veggies like bell peppers or olives. If you don't have fresh oregano, dried works just fine.
