  • 1 block feta cheese (about 8 ounces)
  • 1 cup assorted olives, pitted (Kalamata and green)
  • 1 cup sun-dried tomatoes (preferably packed in oil)
  • 2 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon of red pepper flakes adjust to your spice preference
  • 1/4 cup olive oil
  • Fresh basil for garnish (optional)
  • Crusty bread or pita for serving to scoop up all the goodness!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the block of feta cheese in the center of a medium-sized baking dish.
  3. Scatter the olives and sun-dried tomatoes around the feta.
  4. Add the minced garlic, dried oregano, and red pepper flakes on top.
  5. Drizzle the olive oil over everything.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes, or until the feta is warm and slightly golden.
  2. Garnish with fresh basil and serve immediately with your choice of crusty bread or pita.

Notes

Feel free to substitute olives with roasted red peppers or artichoke hearts for a twist. Adding a splash of lemon juice before baking gives a zingy bite. Store leftovers in the fridge for up to 3 days.
