Method
Cooking the Eggs
- Heat olive oil in a non-stick skillet over medium heat until shimmering.
- Crack the eggs into the skillet, season with salt and pepper, and cook to your liking.
Toasting the Bread
- While the eggs are cooking, toast the slices of bread until golden brown.
Assembling the Sandwich
- On one slice of toasted bread, layer spinach, cherry tomatoes, and avocado.
- Place the cooked eggs on top, sprinkle with feta cheese, and add red pepper flakes if desired.
- Top with the second slice of bread.
Serving
- Cut the sandwich in half and serve immediately.
Notes
For softer avocados, place them in a brown paper bag to ripen. Leftover components can be stored separately in the fridge, but the assembled sandwich may lose its crunch.
