Ingredients
  

For the Sandwich
  • 2 slices whole-grain bread or any bread of your choice
  • 2 large eggs cooked to your liking
  • 1/4 cup crumbled feta cheese use high-quality feta
  • 1/2 cup cherry tomatoes halved
  • 1/4 piece avocado sliced
  • 1 handful fresh spinach for added greens
  • 1 tablespoon olive oil for cooking the eggs
  • to taste salt to season
  • to taste pepper to season
  • a pinch red pepper flakes optional for a bit of heat

Method
 

Cooking the Eggs
  1. Heat olive oil in a non-stick skillet over medium heat until shimmering.
  2. Crack the eggs into the skillet, season with salt and pepper, and cook to your liking.
Toasting the Bread
  1. While the eggs are cooking, toast the slices of bread until golden brown.
Assembling the Sandwich
  1. On one slice of toasted bread, layer spinach, cherry tomatoes, and avocado.
  2. Place the cooked eggs on top, sprinkle with feta cheese, and add red pepper flakes if desired.
  3. Top with the second slice of bread.
Serving
  1. Cut the sandwich in half and serve immediately.

Notes

For softer avocados, place them in a brown paper bag to ripen. Leftover components can be stored separately in the fridge, but the assembled sandwich may lose its crunch.
