Ingredients
  

Bread Base
  • 2 slices whole grain or sourdough bread Say goodbye to that boring white bread!
Egg Mixture
  • 2 large eggs Or egg substitutes if you’re watching cholesterol.
  • 1/4 cup feta cheese Because who doesn’t love cheese?
  • 1/4 cup cherry tomatoes, halved Bursting with sweetness!
  • 1/2 medium avocado, sliced Hello, healthy fats!
  • 1 handful fresh spinach or arugula Green is the new black!
  • 1 tablespoon olive oil A Mediterranean must-have for frying.
  • to taste Salt and pepper Because life is too short for bland food!

Method
 

Preparation
  1. Heat that pan by drizzling a small amount of olive oil in your skillet over medium heat. Allow it to warm while you prep ingredients.
  2. In a bowl, whisk the eggs until fluffy. Pour them into the skillet, cooking for about 2-3 minutes, or until they start to set.
  3. Sprinkle the feta cheese, cherry tomatoes, and a pinch of salt and pepper onto the eggs. Get creative with added ingredients if desired!
  4. Gently fold the eggs once mostly set and let them cook for another minute while toasting your slices of bread.
  5. Assemble by placing a slice of toasted bread, adding the egg mixture, layering slices of avocado, spinach or arugula, and finally placing the second slice of bread on top.

Notes

Don’t have feta? Swap it for goat cheese or cream cheese! Want a spicy kick? Add red pepper flakes while cooking the eggs. Store leftovers in an airtight container and reheat for up to two days.
