  • 2 large Eggs
  • 1/4 cup Feta cheese, crumbled Because who doesn’t love cheese?
  • 1 handful Cherry tomatoes, halved They add that sweet tang!
  • 1 handful Fresh spinach For that healthy spin.
  • 1 tablespoon Olive oil Extra virgin if you’re feeling fancy.
  • to taste Salt & pepper Because bland is not a vibe.
  • 2 slices Pita bread or whole grain bread Your choice for variety.
  • optional Avocado slices or olives For an extra Mediterranean touch.

Method
 

Preparation
  1. In a non-stick skillet over medium heat, add a drizzle of olive oil. Crack those eggs in and let them cook until the whites are set but the yolks are still soft.
  2. Sprinkle the crumbled feta cheese over the eggs, followed by the halved tomatoes and spinach. Cover the pan with a lid for a minute to wilt the spinach and melt the feta.
  3. Sprinkle a pinch of salt and pepper to enhance the flavors and taste along the way.
  4. While the eggs are cooking, toast your pita or bread until golden. Place the egg mixture onto one slice of bread, adding avocado or olives if desired, then top with the second slice.
  5. Cut in half, take a picture for Instagram, and enjoy your sandwich with fresh fruit or yogurt.

Notes

Feel free to use leftover roasted veggies or substitute eggs with tofu for a vegan option. Feta can be replaced with goat cheese or served in slices.
