- In a non-stick skillet over medium heat, add a drizzle of olive oil. Crack those eggs in and let them cook until the whites are set but the yolks are still soft.
- Sprinkle the crumbled feta cheese over the eggs, followed by the halved tomatoes and spinach. Cover the pan with a lid for a minute to wilt the spinach and melt the feta.
- Sprinkle a pinch of salt and pepper to enhance the flavors and taste along the way.
- While the eggs are cooking, toast your pita or bread until golden. Place the egg mixture onto one slice of bread, adding avocado or olives if desired, then top with the second slice.
- Cut in half, take a picture for Instagram, and enjoy your sandwich with fresh fruit or yogurt.
Notes
Feel free to use leftover roasted veggies or substitute eggs with tofu for a vegan option. Feta can be replaced with goat cheese or served in slices.
