Preparation
- Preheat your oven to 400°F (200°C). This step is crucial for that beautiful caramelization we all love!
- In a large bowl, place the chicken breasts and add the olive oil, minced garlic, oregano, salt, and pepper. Toss until the chicken is well coated.
- In a separate bowl, combine the cherry tomatoes, zucchini, red and yellow bell peppers, and red onion. Drizzle with more olive oil and sprinkle with salt and pepper. Toss gently.
Assembly and Baking
- Lay the seasoned chicken breasts in the center of a baking dish and arrange the veggies around them.
- Slide the dish into the oven and bake for about 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
Serving
- Once done, sprinkle some freshly chopped parsley on top and serve your Mediterranean masterpiece!
