Ingredients
  

For the Chicken Burgers
  • 1 lb ground chicken the star of the show!
  • 1 cup breadcrumbs use whole-grain for an extra health boost
  • 1/2 cup feta cheese, crumbled Mediterranean staple
  • 1/4 cup parsley, chopped fresh is best!
  • 1 clove garlic, minced adds amazing aroma
  • 1 tsp dried oregano classic Mediterranean herb
  • to taste Salt and pepper
For the Yogurt Sauce
  • 1 cup plain Greek yogurt you’ll want extras on hand!
  • 1 tbsp lemon juice for a zesty flavor
  • 1 tbsp fresh dill, chopped or more if you’re a fan!
  • to taste Salt and pepper
For the Fresh Relish
  • 1 cup diced cucumbers refreshing crunch!
  • 1 cup diced tomatoes adds vibrant color
  • 1/4 cup red onion, finely chopped optional for added crunch

Method
 

Preparation
  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, crumbled feta cheese, chopped parsley, minced garlic, dried oregano, salt, and pepper. Mix well using your hands until sticky.
  2. Divide the mixture into four equal portions and form them into patties about 1 inch thick. Wet your hands slightly to prevent sticking.
Cooking
  1. Heat a non-stick skillet or grill over medium heat and add a tablespoon of olive oil if desired.
  2. Cook the patties for about 5-7 minutes on each side, or until golden brown and cooked through.
  3. While they cook, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, chopped dill, salt, and pepper in a separate bowl until smooth.
  4. For the relish, combine diced cucumbers, diced tomatoes, and red onion in another bowl. Optionally drizzle with olive oil and toss to combine.
Assembly
  1. Once the patties are cooked, serve them on buns or favorite greens with the yogurt sauce and fresh relish on top.

Notes

Customize the relish for picky eaters by adding diced bell peppers or shredded carrots. Store leftover patties in an airtight container in the fridge for up to 3 days.
