Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Can substitute with cumin or Italian seasoning.

For the Rice
  • 1 cup uncooked rice White or brown rice can be used.
  • 2 cups vegetable or chicken broth For cooking the rice.
Toppings
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese.
  • to taste Fresh parsley or dill for garnish
  • as needed Lemon wedges for serving

Method
 

Cooking the Rice
  1. In a medium saucepan, bring the broth to a boil.
  2. Add uncooked rice, cover, and simmer according to package directions (usually about 15-20 minutes).
Preparing the Chicken
  1. Season your diced chicken with olive oil, garlic powder, paprika, salt, and pepper. Toss to coat.
  2. Heat a skillet over medium heat and add the seasoned chicken.
  3. Cook for about 6-8 minutes, stirring occasionally, until golden brown and cooked through.
Preparing the Vegetables
  1. Chop the cherry tomatoes, cucumber, and red onion.
Assembling the Bowls
  1. Start with a scoop of rice, add sautéed chicken, fresh veggies, and sprinkle with feta cheese.
  2. Garnish with parsley or dill and serve with a lemon wedge.
