  • 1 block feta cheese (about 8 oz) Use flavored feta for an extra kick if desired.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped (jarred in oil works wonders)
  • 1/2 cup kalamata olives, pitted and halved
  • 1 tablespoon olive oil For drizzling the baking dish.
Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste salt and pepper
Garnish
  • a few fresh basil leaves For garnishing before serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Drizzle olive oil in a baking dish and swirl it around.
Layering Ingredients
  1. Place the block of feta cheese in the center of the baking dish.
  2. Surround the feta with cherry tomatoes, sun-dried tomatoes, and kalamata olives.
  3. Sprinkle oregano, garlic powder, salt, and pepper over the dish.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until the feta is slightly golden and the tomatoes are juicy.
Serving
  1. Garnish with fresh basil leaves and serve warm with crusty bread or toss with pasta.

Notes

For leftovers, store in an airtight container in the fridge for up to three days. Don't worry if your feta looks a little crumbly; it's part of its charm.
