  • 2 pieces Flatbread or Pita Bread Store-bought is quick; homemade is an option.
  • 1 cup Hummus Store-bought or homemade.
  • 1 cup Tomatoes, diced For that juicy kick.
  • 1 small Cucumber, diced Optional, for extra crunch.
  • 1/2 cup Feta cheese, crumbled Because feta makes everything better.
  • 1 tablespoon Olive oil For drizzling.
  • Salt and pepper To taste.
  • A handful of fresh herbs (parsley, dill, mint) Mix and match based on your favorite.

Method
 

Preparation
  1. Warm up the flatbread or pita in a skillet on medium heat for 1-2 minutes on each side.
  2. Spread hummus generously over the warm flatbread.
  3. Layer diced tomatoes and cucumber over the hummus.
  4. Add freshly chopped herbs on top.
  5. Crumble feta cheese on top of the herbs.
  6. Drizzle with olive oil and season with salt and pepper.
  7. Cut the flatbread into wedges or tear pieces off to serve.

Notes

Feel free to add roasted bell peppers, olives, or artichokes. Leftovers can be stored in an airtight container in the fridge for a day, though herbs may wilt. Substitute hummus with tzatziki or baba ganoush for variety. This dish can be made vegan by omitting feta cheese.
