Preparation
- Warm up the flatbread or pita in a skillet on medium heat for 1-2 minutes on each side.
- Spread hummus generously over the warm flatbread.
- Layer diced tomatoes and cucumber over the hummus.
- Add freshly chopped herbs on top.
- Crumble feta cheese on top of the herbs.
- Drizzle with olive oil and season with salt and pepper.
- Cut the flatbread into wedges or tear pieces off to serve.
Notes
Feel free to add roasted bell peppers, olives, or artichokes. Leftovers can be stored in an airtight container in the fridge for a day, though herbs may wilt. Substitute hummus with tzatziki or baba ganoush for variety. This dish can be made vegan by omitting feta cheese.
