Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the chopped spinach, crumbled feta, ricotta cheese, garlic powder, red pepper flakes, salt, and pepper. Mix well until blended.
- Lay a sheet of phyllo dough on a clean surface and spray it with olive oil. Add another layer of phyllo on top and repeat until you have three layers.
- Spoon around 2 tablespoons of the spinach and feta mixture onto one edge of the phyllo and roll it up gently, tucking in the sides to avoid spillage.
- Place the rolled crisps seam-side down on a baking sheet lined with parchment paper and spray the tops with olive oil.
Baking
- Bake for about 20-25 minutes, or until the tops are crispy and golden.
Notes
Master the phyllo dough by handling it gently. Leftover filling can be used as a pasta sauce. Pair with tzatziki sauce or hummus.
