Main Ingredients
  • 2 cups fresh spinach, chopped Any leftover spinach is great for this!
  • 1 cup feta cheese, crumbled More cheese makes everything better!
  • 1/2 cup ricotta cheese Creamy goodness
  • 1/2 teaspoon garlic powder Add a little pizzazz
  • 1/4 teaspoon crushed red pepper flakes For a slightly spicy kick
  • 1 package phyllo dough Sounds fancy but is easy to use
  • 1 spray Olive oil spray Or brush some olive oil on
  • to taste serving Salt & pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped spinach, crumbled feta, ricotta cheese, garlic powder, red pepper flakes, salt, and pepper. Mix well until blended.
  3. Lay a sheet of phyllo dough on a clean surface and spray it with olive oil. Add another layer of phyllo on top and repeat until you have three layers.
  4. Spoon around 2 tablespoons of the spinach and feta mixture onto one edge of the phyllo and roll it up gently, tucking in the sides to avoid spillage.
  5. Place the rolled crisps seam-side down on a baking sheet lined with parchment paper and spray the tops with olive oil.
Baking
  1. Bake for about 20-25 minutes, or until the tops are crispy and golden.

Notes

Master the phyllo dough by handling it gently. Leftover filling can be used as a pasta sauce. Pair with tzatziki sauce or hummus.
