For the Quiche
  • 1 pie crust 1 pre-made pie crust Use a store-bought option to save time.
  • 1 tablespoon 1 tablespoon olive oil
  • 1 small 1 small onion, diced
  • 2 cloves 2 cloves garlic, minced
  • 3 cups 3 cups fresh spinach, chopped
  • 1 cup 1 cup sun-dried tomatoes, chopped The ones packed in oil are best for flavor.
  • 1 cup 1 cup feta cheese, crumbled Can substitute with goat cheese or shredded mozzarella.
  • 4 large 4 large eggs
  • 1 cup 1 cup milk Can use your favorite non-dairy alternative.
  • Salt and pepper, to taste
  • Optional: fresh herbs like basil or parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Place the crust into a 9-inch pie dish and pre-bake according to package instructions.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic and sauté until aromatic and soft for about 3-4 minutes.
  4. Add the spinach to the skillet and cook, stirring occasionally, until it wilts, around 2-3 minutes.
  5. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the sautéed veggies, sun-dried tomatoes, and feta cheese.
  6. Pour the filling into the pre-baked pie crust.
  7. Bake the quiche in the preheated oven for 35-40 minutes or until set and golden.
  8. Let it cool for about 10 minutes before serving.

Notes

Crustless option available. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
