Preparation
- Preheat your oven to 375°F (190°C).
- Place the crust into a 9-inch pie dish and pre-bake according to package instructions.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic and sauté until aromatic and soft for about 3-4 minutes.
- Add the spinach to the skillet and cook, stirring occasionally, until it wilts, around 2-3 minutes.
- In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the sautéed veggies, sun-dried tomatoes, and feta cheese.
- Pour the filling into the pre-baked pie crust.
- Bake the quiche in the preheated oven for 35-40 minutes or until set and golden.
- Let it cool for about 10 minutes before serving.

Crustless option available. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month.
