  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 cup cooked rice Day-old rice is perfect for texture.
  • 1 packet taco seasoning Use homemade if feeling adventurous.
  • 1 can diced tomatoes (15 ounces, undrained) Adds moisture and flavor.
  • 1 can black beans (15 ounces, rinsed and drained) Provides protein and fiber.
  • 1 cup corn kernels Can be frozen or canned.
  • 1 cup shredded cheese Cheddar or Mexican blend works perfectly.
  • 1/2 cup sour cream For creaminess.
  • 1/4 cup fresh cilantro (chopped) Optional for garnish.

Method
 

Preparation
  1. In a large skillet over medium heat, brown the ground beef until it's no longer pink, about 5-7 minutes.
  2. Drain any excess fat if needed, and sprinkle with salt and pepper.
  3. Stir in the taco seasoning, chopped tomatoes with their juices, black beans, and corn. Let it simmer for about 5 minutes.
  4. Fold in the cooked rice and sour cream gently until well blended.
  5. Pour the mixture into a greased baking dish and top generously with shredded cheese.
  6. Bake in a preheated oven at 400°F for about 20-25 minutes, until the cheese is bubbly and golden.
  7. Remove from the oven, sprinkle with fresh cilantro if using, and serve hot.

Notes

Using day-old rice enhances the texture. Feel free to customize with additional veggies like zucchini or bell peppers. Use a mix of cheeses for extra flavor.
