  • 1 pound ground beef
  • 1 cup rice, uncooked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, undrained
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend) Use more if desired
  • 1 cup corn (fresh or frozen)
  • 1 piece bell pepper, diced Any color you love
  • 1 onion chopped
  • 1 tablespoon olive oil
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper, sauté until soft.
  3. Add the ground beef to the skillet and break it up as it cooks. Drain any excess fat.
  4. Stir in the taco seasoning, diced tomatoes (with juices), black beans, corn, rice, and beef broth. Season with salt and pepper to taste. Simmer for about 5 minutes.
  5. Pour the mixture into a greased baking dish and sprinkle shredded cheese over the top.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Let it cool for a few minutes, then serve with your favorite toppings.

Notes

Make it vegetarian by substituting with lentils or quinoa. This dish is freezer-friendly; you can assemble and freeze it before baking.
