- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced bell pepper, sauté until soft.
- Add the ground beef to the skillet and break it up as it cooks. Drain any excess fat.
- Stir in the taco seasoning, diced tomatoes (with juices), black beans, corn, rice, and beef broth. Season with salt and pepper to taste. Simmer for about 5 minutes.
- Pour the mixture into a greased baking dish and sprinkle shredded cheese over the top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes, then serve with your favorite toppings.
Notes
Make it vegetarian by substituting with lentils or quinoa. This dish is freezer-friendly; you can assemble and freeze it before baking.
