Preparation
- Line an 8x8 inch square dish with parchment paper.
- In a large microwave-safe bowl, combine the white chocolate chips, sweetened condensed milk, and a pinch of salt.
- Microwave on high in 30-second intervals, stirring between each, until melted and smooth (about 1.5 to 2 minutes).
- Stir in the chopped pistachios and vanilla extract until evenly mixed.
- Pour the melted fudge mixture into the prepared dish and spread evenly.
- Sprinkle some extra chopped pistachios on top for garnish.
- Chill in the fridge for about 2 hours or until fully set.
- Once set, lift the fudge out of the dish using the parchment paper and cut into squares.
Notes
Store the fudge in an airtight container at room temperature for up to a week. For longer storage, refrigerate. You can also substitute pistachios with walnuts or almonds, or drizzle melted chocolate on top for added flair.
