- In a mixing bowl, combine the crushed graham crackers, powdered sugar, cocoa powder, and mini chocolate chips. Give it a good stir to ensure everything is well mixed.
- Slowly pour in the cooled brewed coffee and add the vanilla extract. Mix until all the dry ingredients are fully incorporated into a dough. If it seems a bit too dry, add a splash more coffee or a tiny dash of water.
- Once your dough is ready, fold in the whole roasted coffee beans.
- Roll the mixture into small, bite-sized balls—about the size of a quarter.
- Place your mocha bites on a parchment-lined baking sheet. Optionally, roll them in extra cocoa powder for presentation.
- Refrigerate for at least 30 minutes to firm up, then enjoy!
Notes
Feel free to add a dash of cinnamon or cardamom for a twist, or swap mini chocolate chips for white chocolate or peanut butter chips. Store in an airtight container in the fridge for up to a week.
