Ingredients
  

Dry Ingredients
  • 1 cup finely crushed graham crackers (about 8 full sheets)
  • 1/2 cup powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup mini chocolate chips
Wet Ingredients
  • 1/3 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup whole roasted coffee beans (for crunch and flavor)

Preparation
  1. In a mixing bowl, combine the crushed graham crackers, powdered sugar, cocoa powder, and mini chocolate chips. Give it a good stir to ensure everything is well mixed.
  2. Slowly pour in the cooled brewed coffee and add the vanilla extract. Mix until all the dry ingredients are fully incorporated into a dough. If it seems a bit too dry, add a splash more coffee or a tiny dash of water.
  3. Once your dough is ready, fold in the whole roasted coffee beans.
  4. Roll the mixture into small, bite-sized balls—about the size of a quarter.
  5. Place your mocha bites on a parchment-lined baking sheet. Optionally, roll them in extra cocoa powder for presentation.
  6. Refrigerate for at least 30 minutes to firm up, then enjoy!

Notes

Feel free to add a dash of cinnamon or cardamom for a twist, or swap mini chocolate chips for white chocolate or peanut butter chips. Store in an airtight container in the fridge for up to a week.
