  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (or goat cheese) Use goat cheese for a fancier touch.
  • 1/4 cup walnuts or pecans, roughly chopped Option to toast the nuts for extra crunch.
Dressing Ingredients
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • to taste Salt and pepper Optional: Add a teaspoon of honey for sweetness.

Method
 

Preparation
  1. Wash and dry your salad greens thoroughly.
  2. In a large mixing bowl, combine the salad greens, halved cherry tomatoes, sliced cucumber, and red onion.
Adding Toppings
  1. Sprinkle crumbled feta cheese and chopped nuts onto the salad.
Making the Dressing
  1. In a small bowl, whisk together balsamic vinegar and olive oil.
  2. Season with salt and pepper to taste. Optionally, add a teaspoon of honey for sweetness.
Serving
  1. Drizzle the dressing over the salad right before serving.
  2. Toss everything gently to combine and serve immediately.
