- In a medium mixing bowl, combine the chopped artichokes, olives, parsley, olive oil, lemon juice, salt, and pepper. Stir until everything is beautifully blended.
- Gently add the fresh mozzarella balls to the bowl and toss them with the mixture, taking care not to squish the mozzarella.
- Cover the bowl with plastic wrap or a lid and let it marinate in the fridge for at least 30 minutes.
- Once marinated, use toothpicks or small skewers to spear the mozzarella balls and scoop a bit of the artichoke and olive mix on top. Arrange them on a platter.
Serving
- Serve cold and enjoy the delicious flavors!
Notes
These bites can be made a day in advance. Substitute olives with sun-dried tomatoes or roasted red peppers. For a spicy kick, add red pepper flakes or diced jalapeƱos.
