Ingredients
  

For the mixture
  • 1 cup marinated artichoke hearts, chopped
  • 1/2 cup black olives, pitted and chopped Green olives work too!
  • 2 tablespoons fresh parsley, chopped Or any herbs you love
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt and pepper
For serving
  • 8 ounces fresh mozzarella balls, drained
  • Toothpicks or small skewers for serving Because they make everything more fun!

Method
 

Preparation
  1. In a medium mixing bowl, combine the chopped artichokes, olives, parsley, olive oil, lemon juice, salt, and pepper. Stir until everything is beautifully blended.
  2. Gently add the fresh mozzarella balls to the bowl and toss them with the mixture, taking care not to squish the mozzarella.
  3. Cover the bowl with plastic wrap or a lid and let it marinate in the fridge for at least 30 minutes.
  4. Once marinated, use toothpicks or small skewers to spear the mozzarella balls and scoop a bit of the artichoke and olive mix on top. Arrange them on a platter.
Serving
  1. Serve cold and enjoy the delicious flavors!

Notes

These bites can be made a day in advance. Substitute olives with sun-dried tomatoes or roasted red peppers. For a spicy kick, add red pepper flakes or diced jalapeƱos.
