  • 2 pounds mutton, cut into chunks
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 2 carrots diced
  • 1 bell pepper diced
  • 3 medium tomatoes, chopped
  • 4 cups beef or chicken broth
  • 2 tablespoons tomato paste
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • to taste Salt and pepper
  • 2 tablespoons cooking oil
  • as desired Fresh cilantro for garnish Optional

Method
 

Cooking Steps
  1. In a large pot, heat the oil over medium heat. Add the onions and sauté until golden brown.
  2. Stir in the minced garlic and ginger paste until fragrant.
  3. Toss the mutton chunks into the pot and sear until browned on all sides, about 5-7 minutes.
  4. Add the diced carrots, bell pepper, and chopped tomatoes, mixing well.
  5. Stir in cumin, coriander, turmeric, salt, and pepper.
  6. Pour in the broth and stir in the tomato paste. Bring to a boil, then reduce heat and simmer for about an hour.
  7. Once the mutton is fork-tender, stir in garam masala, taste, and adjust seasoning.
  8. Garnish with fresh cilantro before serving.

Notes

Add a splash of lemon juice for a zesty twist! Use a pressure cooker to speed up cooking, but adjust the liquid amount. If your stew looks lumpy, it's just adding character!
