Ingredients
  

Cookie Base
  • 1 cup Graham cracker crumbs It’s not a cookie without these!
  • 1 cup shredded coconut You can toast it if you’re feeling fancy!
  • 1/2 cup butter Because butter is life.
  • 1 cup powdered sugar Sweetness at its best.
Topping
  • 1 cup caramel sauce Store-bought or homemade, I won’t judge.
  • 1 cup chocolate chips Dark, milk, or white—your call.
  • 1 tablespoon coconut oil For that smooth chocolate finish.

Method
 

Mix it Up
  1. In a mixing bowl, combine the Graham cracker crumbs, shredded coconut, melted butter, and powdered sugar. Stir until it resembles a sticky, sweet mixture.
Press and Set
  1. Press the mixture evenly into the bottom of an 8x8 baking dish and refrigerate.
Caramelize It
  1. Drizzle the caramel sauce generously over the chilled cookie base and spread it evenly.
Get Chocolatey
  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until smooth. Pour over the caramel layer and spread evenly.
Chill It Out
  1. Sprinkle extra coconut on top if desired, then refrigerate for at least 30 minutes to set.
Slice and Serve
  1. Once set, slice into squares or desired shapes and serve.

Notes

For added crunch, consider adding chopped nuts. If the caramel sauce is too thick, gently heat to loosen. Doubling the chocolate coating is an option for a richer taste.
