Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • cup sugar
  • cup unsalted butter, melted
For the filling
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
For the topping
  • 2 cups fresh strawberries, sliced Optional sugar for sweetness depending on ripeness
  • 2 tablespoons sugar optional, depending on strawberry ripeness

Method
 

Preparation of the Crust
  1. In a medium bowl, combine the graham cracker crumbs and sugar. Gradually stir in the melted butter until the mixture resembles wet sand.
  2. Pour the crumb mixture into a 9-inch springform pan. Use the back of a measuring cup or your fingers to press it firmly into the bottom and up the sides.
  3. Refrigerate for about 30 minutes to set.
Making the Filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy.
  2. Gradually add the powdered sugar and vanilla extract, mixing until combined.
  3. In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the cream cheese mixture gently.
Assembling
  1. Spread the cream mixture evenly over your chilled crust. Smooth the top with a spatula.
  2. Refrigerate for at least 4 hours or overnight.
Topping and Serving
  1. Just before serving, arrange the sliced strawberries on top, sprinkling them with sugar if desired.
  2. Cut yourself a slice or three and enjoy!

Notes

Don’t rush the chilling; it gets better the longer it sits. Choose ripe strawberries for the best flavor. Consider using crushed Oreos for a chocolate twist on the crust.
