Method
Preparation of the Crust
- In a medium bowl, combine the graham cracker crumbs and sugar. Gradually stir in the melted butter until the mixture resembles wet sand.
- Pour the crumb mixture into a 9-inch springform pan. Use the back of a measuring cup or your fingers to press it firmly into the bottom and up the sides.
- Refrigerate for about 30 minutes to set.
Making the Filling
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy.
- Gradually add the powdered sugar and vanilla extract, mixing until combined.
- In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the cream cheese mixture gently.
Assembling
- Spread the cream mixture evenly over your chilled crust. Smooth the top with a spatula.
- Refrigerate for at least 4 hours or overnight.
Topping and Serving
- Just before serving, arrange the sliced strawberries on top, sprinkling them with sugar if desired.
- Cut yourself a slice or three and enjoy!
Notes
Don’t rush the chilling; it gets better the longer it sits. Choose ripe strawberries for the best flavor. Consider using crushed Oreos for a chocolate twist on the crust.
