Nutella-Stuffed Mini Pancakes

Ingredients
  

For the Pancake Batter
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg large
  • 2 tablespoons melted butter plus more for cooking
Nutella and Toppings
  • ½ cup Nutella the star of the show!
  • to taste powdered sugar for dusting (optional)

Method
 

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, and melted butter.
  3. Pour the wet ingredients into the bowl of dry ingredients and gently fold until just combined.
  4. Heat a non-stick skillet over medium heat and add a small pat of butter.
Cooking
  1. Using a tablespoon, scoop some batter onto the skillet. Add about a teaspoon of Nutella right in the center of the pancake, then cover with more batter.
  2. Cook for about 2-3 minutes or until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  3. Repeat with the remaining batter, adding more butter as needed.
  4. Serve warm, dusted with powdered sugar and optionally drizzled with maple syrup.

Notes

If Nutella is too thick, microwave for 10 seconds to make it spreadable. Mix in chocolate chips or berries if desired.
