Ingredients
  

For the Filling
  • 6-8 pieces ripe peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1 tsp cinnamon or more if you're a fan!
  • 2 tbsp lemon juice
For the Cobbler Topping
  • 2 cups all-purpose flour
  • 2 cups granulated sugar yes, there’s a theme here!
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 1 cup unsalted butter, melted because butter makes everything better!
  • 1 serving vanilla ice cream for serving, optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, toss your sliced peaches with sugar, cinnamon, and lemon juice. Let them sit for about 10-15 minutes.
Making the Cobbler Topping
  1. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  2. Gradually mix in the milk and melted butter until just combined.
Assembly and Baking
  1. Pour the peach mixture into a greased baking dish (9x13).
  2. Dollop the cobbler batter over the peaches without spreading it evenly.
  3. Bake for 40-45 minutes until bubbly and golden brown.
Serving
  1. Allow the cobbler to cool for a few minutes before serving warm with a scoop of vanilla ice cream.

Notes

Can substitute peaches with canned peaches or other fruits like blueberries or apples. Don't overmix the batter and consider adding lemon zest for extra flavor.
