  • 1 cup uncooked rice (short-grain works best for that creamy texture)
  • 4 cups milk (whole or 2%—your call!)
  • 1/2 cup sugar (a little sweetness goes a long way)
  • 1/4 teaspoon salt (to balance the sweetness)
  • 1 teaspoon vanilla extract (the secret to deliciousness)
  • 1/2 teaspoon ground cinnamon (for that classic flavor)
Optional Ingredients
  • Raisins (for a little chewiness and extra sweetness, optional)

Method
 

Cooking the Rice
  1. In a medium saucepan, combine 1 cup of rice with 2 cups of water and a pinch of salt. Bring to a boil over medium-high heat.
  2. Reduce the heat to low. Cover and simmer for about 15 minutes, or until the water is fully absorbed and the rice is tender.
Mixing Ingredients
  1. Once your rice is cooked, add 4 cups of milk, 1/2 cup of sugar, and 1/4 teaspoon of salt to the saucepan. Stir well to combine.
Simmering the Mixture
  1. Bring the mixture to a gentle boil over medium heat.
  2. Once bubbling, reduce the heat to low and allow to simmer for about 30 minutes, stirring often.
Adding Flavor
  1. After the pudding has thickened, stir in 1 teaspoon of vanilla extract and 1/2 teaspoon of ground cinnamon. Add raisins if desired.
Cooling the Pudding
  1. Remove from heat and let the pudding cool slightly. Transfer to serving dishes or a large bowl. Cover and refrigerate for at least 2 hours.

Notes

If the pudding is too thick, whisk in some extra milk. You can also add nutmeg or almond extract for a different flavor. Leftovers can be stored in the fridge for up to 4 days.
