Preparation
- Season the chicken thighs with paprika, salt, and pepper.
Cooking
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
- Add the chicken and sear for about 4-5 minutes on each side, until golden brown.
- In a bowl, whisk together honey and BBQ sauce.
- Remove the chicken from the pan and set aside. In the same pan, add rice and chicken broth, stirring well.
- Nestle the seared chicken back into the skillet and pour the honey BBQ mixture over it.
- Cover with a lid and let it simmer on low for about 20 minutes.
- After 20 minutes, check the chicken for doneness and ensure the rice is fluffy.
- Garnish with chopped green onions before serving.
Notes
You can substitute chicken with turkey or tofu. Use leftover rice to skip cooking and just adjust the time accordingly.
