  • 1 lb boneless, skinless chicken thighs or breasts if preferred
  • 1 cup rice white or brown, your choice
  • 2 cups chicken broth or water in a pinch
  • 1/2 cup honey
  • 1/2 cup BBQ sauce the bolder, the better
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish

Method
 

Preparation
  1. Season the chicken thighs with paprika, salt, and pepper.
Cooking
  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add the chicken and sear for about 4-5 minutes on each side, until golden brown.
  3. In a bowl, whisk together honey and BBQ sauce.
  4. Remove the chicken from the pan and set aside. In the same pan, add rice and chicken broth, stirring well.
  5. Nestle the seared chicken back into the skillet and pour the honey BBQ mixture over it.
  6. Cover with a lid and let it simmer on low for about 20 minutes.
  7. After 20 minutes, check the chicken for doneness and ensure the rice is fluffy.
  8. Garnish with chopped green onions before serving.

Notes

You can substitute chicken with turkey or tofu. Use leftover rice to skip cooking and just adjust the time accordingly.
