  • 1 lb gnocchi (store-bought) For major time savings
  • 2 cups spinach (fresh or frozen) Fresh or frozen will do
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese Plus more for topping
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Red pepper flakes (optional) If you like a kick

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the spinach and cherry tomatoes to the skillet, stirring until the spinach is wilted.
  4. Pour in the heavy cream and stir until everything is evenly coated. Season with salt and pepper to taste.
  5. Toss in the gnocchi and mix until submerged in the creamy mixture. Sprinkle half of the mozzarella and Parmesan cheese.
  6. Top with the remaining cheeses.
  7. Bake for about 20 minutes or until the top is golden and bubbly.
  8. Once out of the oven, sprinkle some red pepper flakes for a hint of spice, if desired.

Notes

Feel free to swap out the spinach for other veggies like kale or roasted bell peppers. Prepare veggies and cheese ahead of time for quicker prep. If the sauce looks lumpy, don't worry; it's all part of the magic.
