One Pot Creamy Garlic Pasta

  • 8 ounces fettuccine pasta (or your favorite type)
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream Can be substituted with half-and-half or non-dairy milk
  • 4 cloves minced garlic Increase amount for a stronger garlic flavor
  • 1/2 cup grated Parmesan cheese Cheese contributes to the creaminess of the dish
  • 2 tablespoons olive oil For sautéing garlic
  • Salt and pepper to taste Season according to preference
  • Fresh parsley For garnish and added flavor

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until golden and fragrant, about 1-2 minutes.
Cooking the Pasta
  1. Pour in the pasta and broth, stirring gently to submerge the pasta.
  2. Bring to a boil, then reduce to a simmer, cover the pot, and cook for about 10 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the broth.
Making it Creamy
  1. Once the pasta is al dente, stir in the heavy cream and Parmesan cheese until everything is combined and creamy.
  2. If the mixture is too stiff, add a splash more broth.
Finishing Touch
  1. Season with salt and pepper to your liking.
  2. Toss in freshly chopped parsley before serving.

Notes

For added nutrition, feel free to include sautéed vegetables or proteins like chicken or shrimp. Store leftovers in an airtight container for up to 3 days and reheat with a splash of broth.
