Ingredients
  

For the Dumplings
  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1 tsp salt
  • 1 cup chopped vegetables (carrots, bell peppers, scallions) Customize based on preference
  • 1/2 cup cooked protein (chicken, tofu, or other) Use any preferred protein
For the Peanut Sauce
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • a pinch crushed red pepper flakes (optional) For added spice
  • as needed water To thin the sauce

Method
 

Prepare the Dumplings
  1. In a large bowl, combine the flour and salt. Gradually stir in the water until you have a soft dough. Knead it for a few minutes until it’s smooth.
  2. On a floured surface, roll out the dough to about 1/8-inch thickness.
  3. Using a circular cutter or glass, cut out circles from the dough. Place a small amount of chopped vegetables and protein in the center of each circle.
  4. Fold the circle in half and pinch the edges tightly to seal.
Bake 'Em Up
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper, place the dumplings on the sheet, and bake for 20 minutes, or until golden brown.
Whip Up the Peanut Sauce
  1. In a bowl, whisk together peanut butter, soy sauce, honey or maple syrup, rice vinegar, and a pinch of crushed red pepper flakes. Thin it with water to your desired consistency.
Serve and Enjoy
  1. Remove the dumplings from the oven and let them cool for a few minutes. Drizzle peanut sauce over them or serve it on the side.

Notes

For dough consistency, add more flour if sticky or water if too dry. You can customize the fillings based on what you have on hand. This peanut sauce works well with other proteins or as a salad dressing.
