  • 2 packs ramen noodles (any flavor you love!)
  • 1 cup cooked and chopped chicken, pork, or tofu (your choice)
  • 1 cup mixed veggies (think carrots, peas, and maybe some bell pepper)
  • 1 tablespoon soy sauce
  • 1 cup cheese because who doesn’t love cheese?
  • 12-16 pieces frozen dumplings (pick your favorite variety)
  • 2 cups chicken or vegetable broth
  • to taste scallions and sesame seeds for garnish optional, but quite posh

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a pot, boil water and cook the ramen noodles per the package instructions but take them out a minute early.
  3. In a mixing bowl, combine the cooked noodles, chopped meat (or tofu), veggies, soy sauce, and half your cheese. Stir gently.
  4. Pour this mixture into a greased baking dish and add the broth.
  5. Place the frozen dumplings on top and sprinkle with the remaining cheese.
  6. Bake for about 25-30 minutes until the cheese is golden brown and bubbly.
  7. Once done, let it rest for a few minutes and garnish with scallions and sesame seeds.

Notes

You can assemble everything the night before and slide it into the oven when ready. This dish is versatile; swap in your favorite veggies or proteins.
